I was thinking about that as I was looking for insurance for my car, it's safe to say that insurance companies might not want to cover them.

Of course they are. What if they were involved in an RTA? How would people be able to claim off the force?

If you are meaning that you bought a retired squad and you would like to insure it, then yes, you can insure those cars with any insurance company.
